This mango lime overnight oats recipe is super simple to prepare – just mix all the ingredients together and pop it in the fridge! This recipe is filled with fresh and tropical flavors like mango, lime, and coconut. The oats become super thick and creamy, taste amazing, and will keep you full for hours.

What are overnight oats?
Overnight oats are a no cook way to prepare oatmeal. The base of overnight oats is oats – usually old fashioned rolled oats. Combined with a liquid like almond milk and left to soak, oats expand and become soft and chewy even without cooking them. It’s an easy and healthy way to prepare oats without turning on the stove or microwave!
Overnight oats are typically eaten cold, but they also taste good heated up in the microwave the next morning. They are the perfect vehicle for all kinds of flavors, add-ins, and healthy toppings. They taste best when lightly sweetened – you can use mashed banana, applesauce, or a drop of maple syrup or honey!
Are overnight oats healthy?
The base of overnight oats, which is just oats and liquid, is a healthy breakfast option. Oats are packed with nutrition! One half cup of dry oats contains:
- 4 grams of fiber – much of which is soluble fiber
- 5 grams of plant-based protein
- A good source of iron, magnesium, zinc, manganese, and selenium
Overnight oats taste pretty plain on their own, so they are the perfect vehicle for healthy toppings to add flavor, texture, and nutrition. Some of my favorite healthy ingredients to add to overnight oats include:
- Chia seeds
- Hemp seeds
- Banana
- Fresh fruit: mango, berries, apples, pear
- Nut butter: almond butter, peanut butter
- Shredded coconut
- Nuts: almonds, cashews, walnuts
- Greek yogurt
- Cinnamon
Ingredients in mango lime overnight oats
Here are all the ingredients you need to make this overnight oatmeal recipe:
- Old fashioned rolled oats
- Chia seeds
- Mango
- Lime
- Unsweetened shredded coconut
- Plain Greek yogurt
- Unsweetened almond milk, or other plant milk
- Vanilla extract
- Maple syrup
I do not recommend using steel cut oats for overnight oats. They do not absorb liquid as well as old fashioned oats, so they don’t get as soft and chewy. You can try using quick oats, but the texture might be a bit thinner and mushier.
Making and storing mango lime overnight oats
To prepare mango lime overnight oats, combine all the dry ingredients in a jar or airtight container: oats, chia seeds, and shredded coconut. Then add the Greek yogurt and liquid ingredients: almond milk, vanilla extract, lime juice, and maple syrup.
Add lime zest and mix everything up very well. If you are preparing the overnight oats in a jar, you can close the jar and shake it up.
Cover the overnight oats and put them in the fridge to set overnight. Usually, overnight oats need at least one hour to thicken up to the proper consistency.
When you’re ready to eat, add diced fresh mango to top off the overnight oats. No need to heat them up, as they are meant to be eaten cold!
Storing overnight oats
One of the best parts about overnight oats is that you prepare them in advance, so they are ideal for meal prepping. The longer overnight oats sit in the fridge, the more liquid they will absorb and the softer they become.
You can prepare overnight oats up to 5 days in advance and keep them in the fridge. Just be aware that the texture may be softer and less chewy on day five. To avoid textural changes, you can prep multiple individual containers of just the dry ingredients, then add the wet ingredients to one jar and pop it in the fridge the night before.

Ingredients
- 1 cup old fashioned rolled oats
- 1 1/2 tbsp chia seeds
- 2 tbsp unsweetened shredded coconut
- Pinch of salt
- 1/3 cup plain Greek yogurt
- 1 1/4 cup unsweetened almond milk
- 1/2 tsp vanilla extract
- Zest and juice of 1 lime
- 1 1/2 tbsp maple syrup
- 1 ripe mango, cubed
Instructions
- Combine oats, chia seeds, shredded coconut, and salt in an airtight container or jar.
- Add the Greek yogurt, almond milk, vanilla extract, lime juice and zest, and maple syrup to the container. Mix everything up very well.
- Cover the container and put in the fridge to set for at least one hour, ideally overnight.
- When ready to eat, portion into two bowls and add fresh mango cubes. Stir it up and enjoy!
Notes
I do not recommend using steel cut oats for overnight oats. They do not absorb liquid as well as old fashioned oats, so they don’t get as soft and chewy. You can try using quick oats, but the texture might be a bit thinner and mushier.
This recipe serves two, but you can easily halve everything to make a single serving of overnight oats.
