Eggs are a nutritious food packed with high quality protein. As a Registered Dietitian who follows a plant-based diet, I rely on eggs as a staple in my diet because they are so nutrient-dense. Some of my go-to egg dishes are frittatas, egg salad, and omelettes.
One large egg provides 6 grams of protein, plus Vitamin B12, selenium, and choline. Note that most of the nutrients in eggs are in the yolk. While egg yolks do have cholesterol, research shows that eating eggs does not have a negative impact on your cholesterol levels or heart disease risk for most people.
