In my opinion, the best recipes are ones that are delicious, easy to make, and good for you. A recipe can still be fine if it doesn’t fit into one of those categories, but I probably won’t make it more than once.

The recipes I find myself coming back to again and again fit those three criteria. If a meal I make tastes great, is nutritious, and is on the table in 30 minutes, I am sold. I am happy to say that this veggie packed kimchi fried quinoa is one of those fantastic meals!

What is kimchi?

You may be wondering what the heck kimchi is while reading this post. Kimchi is a traditional Korean fermented vegetable dish. Vegetables such as napa cabbage and radish are fermented with various seasoning and spices. Kimchi can be served in a main dish, or as a side to rice or noodles.

While kimchi is not a traditional ingredient in fried rice, it is an absolutely delicious and flavorful addition to this kimchi fried quinoa. Also, because it is fermented, kimchi is rich in gut friendly probiotics!

How to make kimchi fried quinoa

  • Saute onion, garlic, and ginger.
  • Add vegetables and cook until fork tender.
  • Mix in sauces, seasonings, and kimchi.
  • Serve warm with a fried egg on top.

Tips for making this recipe perfectly

  • Use day old, cold quinoa. Freshly cooked, warm quinoa is stickier and won’t mix as well. If you are cooking quinoa the day of, spread it out in a thin layer on a baking sheet to cool before adding to the dish.
  • Chop broccoli into small pieces. Instead of cutting broccoli into big florets, chop it into smaller pieces so it melds well with the other ingredients.
  • Use a larger pan than you think you need. This recipe calls for lots of veggies and 4 cups of quinoa cooked in the same pan. Use your largest skillet or wok so everything fits and cooks evenly.

Veggie Packed Kimchi Fried Quinoa (Gluten Free)

This kimchi fried quinoa is a healthier version of your favorite take-out fried rice! It’s loaded with veggies, easy to make, and super flavorful.

  • 1 tbsp avocado oil
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 1 inch piece fresh ginger, peeled and minced
  • 1 head broccoli, chopped into small pieces
  • 1 red bell pepper, diced
  • 1 cup frozen peas, cooked according to package instructions.
  • 4 cups cooked quinoa
  • 3 tbsp low sodium tamari
  • 1/2 tbsp toasted sesame oil
  • 1 cup kimchi + 2 tbsp kimchi “juice” from the jar
  • 2 scallions, sliced
  • 1 tbsp sesame seeds
  • Red pepper flakes
  • 46 fried eggs


  1. Heat avocado oil in a large skillet or wok over medium heat.
  2. Add onion and cook for 2-3 minutes until translucent.
  3. Add garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add broccoli and bell pepper and cook for about 5 minutes, stirring occasionally, until fork tender.
  5. Add peas, quinoa, tamari, and sesame oil. Stir well to combine.
  6. Stir in kimchi and kimchi “juice”, mixing together and cooking for another 1-2 minutes.
  7. Portion kimchi fried quinoa into desired number of bowls.
  8. Top each bowl with scallions, sesame seeds, red pepper flakes, and a fried egg.


  1. Stores well in the fridge (without the fried eggs) in an airtight container for up to 4 days.
