This Greek yogurt banana pudding is the newest addition to my Greek yogurt desserts collection, and you are going to LOVE it. What makes it so great?

Description
If you’re searching for easy, healthy dessert recipes, look no further than this healthier banana pudding! Made with Greek yogurt, it’s super creamy and has 13 grams of protein per serving. The addition of Nilla Wafers, banana slices, and a little bit of whipped cream, it’s the perfect healthy sweet treat! Makes two generously sized servings.
Ingredients
- 1 cup plain Greek yogurt (preferably 2% or 5% fat)*
- 2 small-medium ripe bananas with brown spotting
- 1–2 tbsp maple syrup*
- 1/2 tsp vanilla extract
- 8–10 Nilla wafers, roughly crumbled with your hands
- 4 tbsp whipped cream
Instructions
- In a small personal blender such as a NutriBullet, add the Greek yogurt, one of the bananas, maple syrup, and vanilla extract.
- Important: Blend until JUST combined. YOU DO NOT WANT TO OVER-BLEND into a complete liquid. It’s OK if there are a few small lumps of banana in the mixture.
- Slice the remaining banana into coins.
- Assemble the banana puddings in two ~10 oz jars. Start with a layer of the blended pudding, then a layer of banana coins, then a layer of crushed Nilla wafers. Repeat with another layer of pudding, another layer of banana coins, and finally top with a few tbsp of whipped cream and the remaining crushed Nilla wafers.
- Cover the jars and set in the fridge overnight to thicken up. Or, enjoy right away as is!
Notes
*Recipe testing notes
- I’ve tested this recipe with Fage 2% and Fage 5% plain Greek yogurt. Both work well. I recommend using these as opposed to fat-free because they have a less tangy flavor + richer mouthfeel, which is conducive to a dessert recipe. Plus, a little fat makes this dessert more filling and satisfying!
- I’ve tested this recipe using 1 tbsp and 2 tbsp of maple syrup. The banana adds a bit of natural sweetness, so I personally preferred it with 1 tbsp. But if you know you prefer a sweeter dessert, add 2 tbsp!
