This “recipe” is less a recipe than it is a well-planned grouping of ingredients that provides filling protein, fiber, healthy fats, and micronutrients.

Just prep all your lunchable goodies (hard boiled eggs, shelled edamame, berries, cheese & crackers, and cucumbers) and assemble them in lunchable containers – I like these stainless steel bento boxes.

  • 3 large eggs
  • 10 oz package frozen shelled edamame
  • 1 medium cucumber, sliced
  • 1/2 cup berries (I used blackberries and strawberries)
  • 3 oz cheddar cheese, sliced thinly
  • 18 original Triscuit crackers

Instructions

  1. Hard-boil the eggs: Bring a medium pot of water to a boil. Gently lower the eggs into the boiling water using a slotted spoon. Cook in the boiling water for 11 minutes. Immediately place the cooked eggs in a bowl of ice water to stop cooking. Let them cool for 5 minutes, then peel and cut in half.
  2. Prepare frozen edamame: Bring a medium pot of water to a boil and add a generous pinch of salt. Cook the edamame for 2-3 minutes in the boiling water, then drain in a colander and rinse under cold water for a minute.
  3. Assemble the lunchables. Each lunchable should have approximately: 1 hard boiled egg, 3/4 cup edamame, 1/2 cup berries, 1 cup cucumber slices, 1 ounce of cheddar cheese slices, and 6 Triscuit crackers.
  4. I like to season the edamame and hard boiled egg with a nice pinch of flaky sea salt.

Notes

The crackers tend to get soft when stored in the fridge overnight. If you are not eating them right away, store the crackers in a separate baggie or container in the pantry.
