Roasted Golden Beets with Goat Cheese

Beautiful golden beets are roasted whole in the oven, then sliced up and served with goat cheese and fresh parsley. A simple, delicious, and nutritious side dish!

prep the beets

Trim off the beet greens, wash, and scrub the beets dry.

wrap in foil

Drizzle each beet with olive oil and a pinch of salt. Wrap each one individually in foil.

roast in oven

Place wrapped beets in baking dish with 1 inch of water. Roast until fork tender.

remove skin and slice

Use the foil to rub off the skin of the beets. Slice into thin rounds.

assemble the dish

Arrange the sliced beets on a plate. Drizzle with olive oil and add parsley and goat cheese.
