This easy vegan and gluten free dinner recipe is the perfect balanced meal – brown rice, broccoli, and tofu drenched in the best homemade peanut sauce.

Press tofu

Wrap a block of extra-firm tofu in paper towels and press between two plates.

COOK BROWN RICE

In a medium saucepan, cook brown rice according to package instructions.

ROAST BROCCOLI

Toss broccoli florets with olive oil, salt, and pepper, and roast in the oven.

Cube tofu

Cut the pressed tofu into 1 inch cubes.

Bake Tofu

Toss tofu cubes with olive oil, salt, and pepper, and bake in the oven until crispy.

Make peanut sauce

Whisk together all the peanut sauce ingredients until smooth and creamy with no lumps.

Toss tofu in sauce

Put cooked tofu in mixing bowl and toss it up in the peanut sauce.

Assemble bowls

Assemble bowls with brown rice, broccoli, peanut tofu, and top with sesame seeds.
