This healthy homemade granola is easy to make and packed full of healthy ingredients like cashew nuts, almonds, and old fashioned rolled oats. It has the BIGGEST crunchy clusters! This granola recipe is vegan and gluten free.
mix dry ingredients
Add oats, slivered almonds, cashews, shredded coconut, spices, and salt to a bowl & mix.
Mix in the wet ingredients: maple syrup, melted coconut oil, and vanilla and almond extracts.
Line a baking tray with parchment paper and spread granola out into one even layer.
Bake the granola in a preheated, without stirring. Let cool completely then break into clusters.
Mix in the banana chips, chocolate chips, and large coconut flakes.
