Healthy No Mayo Egg Salad

This protein-packed healthy egg salad recipe is made with Greek yogurt instead of mayonnaise, so it’s still creamy and delicious! It’s an easy recipe that comes together quickly and  made with a handful of simple ingredients.

Boil eggs

Boil eggs for 11 minutes. Transfer to a bowl with ice water when they are done cooking to cool.

Peel the hard-boiled eggs when they are cool enough to handle.

Cut eggs

Cut the eggs in half the long way.

remove yolks

Scoop out the egg yolks with a spoon into a small mixing bowl.

Chop up the egg whites into small chunks - about 1/4th inch pieces.

Add plain Greek yogurt, Dijon mustard, dill, chives, salt, and pepper to the bowl with the yolks and mix until creamy.

Stir in the egg whites to the mixture.

Serve egg salad on sandwiches, salads, bagels. wraps, or however you like it!
