Mushroom & Kale Farro Risotto (Farotto)

This kale & mushroom farro risotto recipe is creamy, hearty, and comforting. Farro risotto, aka farrotto, is a nutritious twist on traditional risotto, but just as delicious! Enjoy this vegetarian meal for your  next at home date night.

Cook mushrooms

In a heavy bottomed pot, cook shallots and mushrooms in olive oil and butter with salt, pepper, and dried  rosemary.

add farro

Add the farro and white wine, stir and cook until the wine is absorbed.

add kale and broth

Add kale and vegetable broth and give it a stir, bring to a boil, reduce to simmer and cover.

Let it cook

Cook the farro risotto for about an hour covered, stirring every 10-15 minutes.

Add Parmesan Cheese

Once farro risotto is thickened up, stir in the parmesan cheese.

Serve

Serve right away, garnished with freshly cracked pepper and chopped parsley.
