Cinnamon Toast Crunch Granola

This healthy cinnamon toast crunch granola is reminiscent of a childhood favorite cereal. Vegan and Gluten Free.

Ingredients

Old Fashioned Oats

Cinnamon

Cashews

Vanilla Extract

Brown Rice Crisp Cereal

Maple Syrup

Coconut Oil

Mix dry ingredients

In a large mixing bowl, mix up the oats, brown rice crisp cereal, cashews, cinnamon, and salt.

Mix WET ingredients

In another bowl, mix together maple syrup, coconut oil, and vanilla extract.

Transfer to Baking Sheet

Line a baking sheet with parchment paper, and transfer granola mixture.

Spread out the mixture

Use the back of a wooden spoon or your hands to spread it out into a single layer.

Bake the granola

Bake in the oven at 325 degrees F for about 30 minutes.

Let Granola Cool

Let the granola cool without touching it, then use your hands to break it up into large clusters.
