As a Registered Dietitian, I am here for the resurgence in popularity of cottage cheese recipes taking over social media right now. Cottage cheese is an excellent source of high-quality protein, making it and ideal addition to nutritious breakfasts, snacks, or lunches.

Perhaps my favorite way to enjoy cottage cheese is whipped cottage cheese. When you whip cottage cheese in a food processor, it becomes super creamy, smooth, light, and airy. It’s similar to whipped ricotta, whipped goat cheese, or cream cheese.

Whipped cottage cheese makes for a delicious high-protein spread for toast. This vegetarian savory cottage cheese toast recipe features a mixture of fresh chopped tomatoes, fresh basil, balsamic vinegar, and extra virgin olive oil. It’s simple, fresh, and takes 10 minutes to prepare!

Cottage cheese nutrition benefits

Cottage cheese is probably most well known for it’s high protein content. One half cup of whole milk cottage cheese provides 14 grams of protein. This same serving provides additional nutrients:

  • 80 mg calcium (6% of your daily needs)
  • 0.71 mcg vitamin B12 (30% of your daily needs)
  • 0.186 mg riboflavin (14% of your daily needs)
  • 10.17 mcg selenium (18% of your daily needs)
  • 151.42 mg phosphorus (12% of your daily needs)

Cottage cheese and other dairy products can be a smart addition to a plant-based diet. This is because cottage cheese is an excellent source of protein and vitamin B12 – nutrients that may be more difficult to get enough of on a plant-based diet.

Tip: Cottage cheese is generally high in sodium. One half cup has 458.78 mg, or 20% of your daily needs. To avoid eating an excess of sodium, pair with low sodium foods or no sodium foods, like fresh vegetables and fruits.

Ingredients in whipped cottage cheese toast

Everything you need to make this recipe, below:

  • Cottage cheese: To make whipped cottage cheese, I prefer to use whole milk cottage cheese as it is creamier and tastes richer. You can use whatever brand you prefer.
  • Fresh tomatoes: Use whichever tomatoes look best at your grocery store. I used tomatoes on the vine for this recipe. This would be delicious with ripe, in-season heirloom tomatoes if you can find them! Read about the nutrition benefits of tomatoes, below!
  • Fresh basil: Tomatoes + basil are a classic flavor combination. When shopping for fresh basil, look for bright green, perky leaves with no brown spots.
  • Bread: I love a chewy sourdough bread for toast, but you can really use whichever bread you prefer.
  • Balsamic Vinegar: A splash of good quality balsamic vinegar adds a nice tartness and pairs perfectly with fresh tomatoes.
  • Extra Virgin Olive Oil: Extra virgin olive oil is less processed than regular olive oil, so it maintains a more robust flavor. Olive oil is rich in heart-healthy monounsaturated fatty acids and antioxidants.
  • Salt: A small pinch of salt rounds out the tomato basil mixture.
  • Pepper: Freshly cracked black pepper on top of this toast recipe rounds everything out!
