  • Fresh basil: Tomatoes + basil are a classic flavor combination. When shopping for fresh basil, look for bright green, perky leaves with no brown spots.
  • Bread: I love a chewy sourdough bread for toast, but you can really use whichever bread you prefer.
  • Balsamic Vinegar: A splash of good quality balsamic vinegar adds a nice tartness and pairs perfectly with fresh tomatoes.
  • Extra Virgin Olive Oil: Extra virgin olive oil is less processed than regular olive oil, so it maintains a more robust flavor. Olive oil is rich in heart-healthy monounsaturated fatty acids and antioxidants.
  • Salt: A small pinch of salt rounds out the tomato basil mixture.
  • Pepper: Freshly cracked black pepper on top of this toast recipe rounds everything out!

  • 1 tsp balsamic vinegar
  • Pinch of salt
  • 2 slices sourdough bread, or bread of choice
  • Freshly cracked black pepper


Instructions

  1. Prepare the whipped cottage cheese: put the cottage cheese in a food processor fitted with an S blade. Blend for 1-2 minutes until it is smooth, creamy, and with no lumps remaining.

  2. In a small mixing bowl, combined the diced tomatoes, chopped basil, extra virgin olive oil, balsamic vinegar, and salt. Mix together to combine.
