A comforting vegan stew recipe

In this unprecedented time, I’m craving all the warm and comforting foods. Even better if the meals are easy and inexpensive to make! This hearty Spanish chickpea spinach stew is the perfect vegan recipe to make for dinner tonight.

Inspired by one of my favorite Spanish tapas dish, the base of this stew is canned chickpeas. We cook them with onion, garlic, and lots of spices, then simmer in canned diced tomatoes. Mix in chopped spinach (frozen!) and you have a pantry friendly dinner ready in under 30 minutes. Serve it as is, or with brown rice.

Spanish Chickpea Spinach Stew (Vegan, Gluten Free)

  • 1 tbsp olive oil
  • Half of a white onion, diced
  • 5 cloves garlic, minced
  • Salt
  • Pepper
  • 2 tsp cumin
  • 4 tsp smoked paprika
  • 1/4 tsp cayenne
  • 2 15 oz cans chickpeas, drained and rinsed
  • 1 28 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 3 cups frozen chopped spinach 
  • 1 tbsp lemon juice


  1. Heat olive oil on medium heat in a saute pan. Add onion and a shake of salt and pepper. Stir and cook for 2-3 minutes until onion is translucent.
  2. Add garlic and cook for an additional 1-2 minutes.
  3. Add spices, stir to coat onion and garlic, and cook for 1 minute until fragrant.
  4. Stir in chickpeas, making sure to stir well to coat them well with the spices. Cook for 5-10 minutes in the spices. Use your spoon to mash some of the chickpeas a bit.
  5. Pour in the diced tomatoes and tomato paste. Bring to a simmer, cover, and let simmer for 20 minutes. Stir occasionally.
  6. Add spinach, lemon juice, and salt and pepper to taste. Cook for another 3-5 minutes until spinach is heated through.
  7. Serve immediately, or store in the fridge and reheat later. 


  • Store in an airtight container for up to 5 days. Enjoy reheated.
