Ingredients

- 1 cup raw cashews
- 1/4 cup unsweetened shredded coconut
- 1/4 cup oats
- 8 medjool dates, pitted
- 3 tbsp cacao powder
- 1/4 tsp salt
Instructions
- Combine all ingredients in a food processor.
- Blend together for 3-5 minutes, until a sandy, grainy consistency is reached. Scrape down the edges of the bowl occasionally, if necessary.
- Remove “dough” from food processor and use your hands to form a large ball. Break off ~1 tbsp sized pieces and roll into 10-12 smaller balls.
- Roll each ball in additional shredded coconut, if desired.
Notes
Best stored in the refrigerator for up to two weeks.
