Simple Strawberry & Lemon Mocktail
This low sugar strawberry mocktail with lemon is a refreshing beverage sure to cool you off on a hot day! It’s also something fun to make and drink as an alternative to alcohol. Made with four simple ingredients, it’s ready to sip in about five minutes.
I love a good cocktail every now and then, but as a Registered Dietitian, I would choose a low sugar mocktail more often! This strawberry lemon mocktail is super refreshing, not too sweet, and so easy to make! It’s ready to drink in about five minutes, and makes two servings. It is vegan and gluten free!
What is a mocktail?
A mocktail is simply a cocktail or mixed drink made without any alcohol. Some mocktails might include syrups, sodas, or other mixers you would find in an alcoholic cocktail, but these ingredients can be laden with added sugar. This strawberry lemon mocktail is low in sugar as it utilizes club soda, fresh strawberries and lemon juice, and just one teaspoon of added sugar per serving!
Ingredients in strawberry & lemon mocktail
You need just four ingredients to make this mocktail:
- Club soda
- Strawberries
- Lemon
- Granulated sugar
Kitchen tools needed
To make this mocktail recipe, you will need a small bowl, a citrus zester, and a muddler. If you do not have muddler, you can use a wooden spoon or the handle of a rolling pin in a pinch! I actually used the tamper that came with my blender.
Step by step instructions
- Wash the strawberries and trim off the stems. Cut them in half, or quarters if they are large strawberries.
- Place strawberries in a small bowl with lemon zest and sugar.
- Use your muddler to muddle the strawberries by pressing down and twisting the muddler into the berries. Keep going until the berries are significantly broken up into a liquid. It’s ok if there are some small chunks left!
- Spoon an equal amount of the strawberry mixture into two 12 ounce glasses. Add a squeeze of lemon juice to each glass.
- Fill each glass with ice cubes, then pour club soda over the ice to the top.
- Gently mix up the drinks with a spoon.
- Garnish with lemon slices and enjoy!
If you don’t wish to have small bits of strawberry in the drink, you can push the muddled mixture through a sieve to remove any small bits of berry and seeds.

You can prepare the muddled strawberries up to one day in advance. Store them in the fridge in an airtight container until ready to serve. Assemble the drinks when you are ready to sip!

Ingredients
- 1 cup fresh strawberries
- 2 tsp fresh lemon zest
- 1 tbsp fresh lemon juice, divided
- 2 tsp granulated sugar
- 16 oz club soda
- 3–4 cups of ice
Instructions
- Wash the strawberries. Trim off the stems and cut them in half, or in quarters if using very large berries.
- Put the strawberries in a small bowl along with the lemon zest and sugar.
- Muddle the ingredients together by pressing firmly down with a muddler and twisting it. Keep going until the berries are mashed well, and it resembles a thick syrup.
- Spoon an equal amount of the mixture into two 12 ounce glasses.
- Add 1/2 tbsp lemon juice to each glass.
- Fill each glass with ice, then pour in the club soda to the top.
- Use a spoon to gently mix everything together in the glasses.
- Garnish with lemon slices and enjoy!
