This whipped ricotta toast with roasted strawberries is *chef’s kiss*. It’s something you might see on the menu of your favorite brunch spot, but it is so easy to make at home!

As a Registered Dietitian, I love to use seasonal produce in creative ways to make them shine – enter these juicy and sweet roasted strawberries! Roasting the berries concentrates their sweetness, making them irresistible on top of honey whipped ricotta cheese.

If you’re intimidated by the idea of whipped ricotta and roasted strawberries, don’t be! This recipe is very easy to make but the results are super impressive. This toast recipe is vegetarian and serves four (one large piece of toast per person).

Ingredients in roasted strawberry & whipped ricotta toast

Everything you need to make this recipe:

  • Ricotta cheese
  • Fresh strawberries
  • Lemon
  • Honey
  • Olive oil
  • Salt
  • Hearty bread to make toast – I like sourdough or boule
  • Mint, for garnish (optional)

Kitchen tools needed

You will need a food processor to make the whipped ricotta, a lemon zester, a baking tray to roast the strawberries on, and a toaster for your toast.

How to make whipped ricotta

  1. Add ricotta cheese, honey, salt, and lemon zest to a food processor fitted with an S-blade.
  2. Turn on the food processor and blend for about 30 seconds until the ricotta is smooth and creamy.
  3. Scrape down the bowl, then put the lid back on.
  4. Turn the food processor on again and drizzle in the olive oil.
  5. Continue to blend until olive oil is fully incorporated.

How to make roasted strawberries

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Wash and dry the strawberries.
  3. Remove the leaves and stems.
  4. Slice strawberries in half.
  5. Arrange strawberries cut side down on the prepared baking sheet.
  6. Pop them in the oven for about 25 minutes, until juicy and very tender.

Once the whipped ricotta and roasted strawberries are prepared, you can assemble your toast! Top slices of toast with a heaping dollop of the whipped ricotta and spread it out. Add a generous scoop of the roasted strawberries. Garnish with a drizzle of honey and fresh mint leaves (if using them). Voila!

Can I prepare this recipe in advance?

You can absolutely prep the roasted strawberries and whipped ricotta up to three days in advance of serving! Store them separately in airtight containers in the fridge.

When ready to serve, give the whipped ricotta a good serve and heat the strawberries in the microwave until warm. Toast your bread and add the toppings!

How else can I use roasted strawberries?

If you happen to have leftover roasted strawberries, you can add them to yogurt bowls, oatmeal (either stovetop oats or overnight oats), or smoothies. They would be delicious as a topping for homemade frozen Greek yogurt!

Roasted Strawberries

  • 1 pound strawberries, stems removed and cut in half

Whipped Ricotta

  • 1 cup full-fat ricotta cheese
  • 1 tbsp honey
  • 1 tsp lemon zest
  • 1/4 tsp Kosher salt
  • 1 tbsp olive oil

Roasted Strawberry & Whipped Ricotta Toast

  • 4 slices of hearty bread, such as sourdough
  • Honey
  • Handful of fresh mint leaves (optional)


Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Spread out the cut strawberries, cut side down, on the lined baking sheet.
  3. Roast in the oven for 25-28 minutes, until very tender and you see some of the juices releasing.
  4. Use a spatula to scoop up the strawberries and their juices and put them in a small bowl.
  5. While the strawberries roast, prepare the whipped ricotta. 
  6. Add ricotta cheese, honey, lemon zest, and salt to a food processor.
  7. Blend for about 30 seconds until the ricotta is smooth and creamy. You may need to scrape down the bowl once.
  8. Blend again and slowly drizzle in the olive oil through the tube in the food processor lid, continuing to blend until the oil is incorporated.
  9. Toast your bread to your desired doneness, then spread a generous dollop (about 1/4 cup) of whipped ricotta onto each piece of toast.
  10. Add a few big spoonfuls of roasted strawberries on top of the ricotta.
  11. Drizzle each piece of toast with honey and top with a few mint leaves for serving.
