This quick & easy cucumber tomato salad with red onion is a healthy side salad recipe you can make in about 15 minutes! It’s dressed in a zesty avocado lime ranch dressing that is made using protein-rich Greek yogurt instead of mayonnaise. Follow my simple step-by-step instructions with photos and a video to get this salad on the table ASAP!



Cucumber tomato salad

  • 1 large English cucumber, peeled with stripes and sliced into rounds
  • 2 1/2 cups cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • Pinch of flaky sea salt, for serving

Avocado lime ranch dressing

  • 1 large ripe avocado
  • 1 cup plain Greek yogurt, full fat
  • 3/4 cup water
  • 3 tbsp dill
  • 3 tbsp parsley
  • 3 tbsp chives
  • Juice of 1 lime
  • 1/2 tsp dried onion
  • 1/2 tsp garlic powder
  • Heaping 1/4 tsp Kosher salt


  1. Prepare the dressing: add all of the dressing ingredients to a food processor. Blend for 30 seconds – 1 minute, or until the dressing is smooth and creamy with no lumps.
  2. Add the cucumber, tomatoes, red onion, and parsley to a large mixing bowl.
  3. Pour 1/4 – 1/2 cup of dressing over the vegetables. Use mixing spoons to toss the ingredients together until everything is coated in the dressing.
  4. You can add more dressing if you’d like.
  5. Transfer the salad to a serving bowl if using, then sprinkle with a pinch of flaky sea salt to serve.


Once you have dressed the salad, it’s best eaten right away.

If you do have leftovers, store them in the fridge in an airtight container and enjoy within 24 hours, because the salad will get soft the longer it sits.
