It’s similar to my cucumber tomato avocado salad, with crunchy cucumber, juicy cherry tomatoes, zippy red onion, and a creamy Greek yogurt based avocado lime ranch dressing.

Serve is as an easy side salad with any meal, like my roasted vegetable tacos, air fryer salmon, baked cod with lemon and capers, or mushroom enchiladas.

This creamy cucumber salad with tomatoes is vegetarian, gluten free, and nut free. It takes 15 minutes or less to prepare, and serves 4-6 as a side!

Ingredients

Here’s everything you’ll need to make this recipe:

  • English cucumber: English cucumbers, or seedless cucumbers, have much smaller seeds and are less watery than other cucumber varieties, making them good for salads.
  • Cherry tomatoes: I find that cherry tomatoes are more flavorful than large tomatoes from the grocery store, especially out of tomato season.
  • Red onion: A little bit of chopped red onion adds a nice zesty bite to this salad.
  • Parsley: A handful of chopped fresh parsley helps make this salad bright and fresh. You could use another fresh herb, like dill or basil!
  • Flaky sea salt: Optional, but it’s the perfect final touch to sprinkle onto the salad once it is dressed.
  • Avocado lime Greek yogurt dressing: This creamy dressing is so easy to make in a food processor. You need ripe avocado, lime, plain Greek yogurt, dill, parsley, chives, onion powder, garlic powder, salt, and water to make it.

  • Cutting board

Step-by-step instructions

1. Make the avocado lime ranch dressing: add all the dressing ingredients to a food processor and blend for 30 seconds – 1 minute until smooth and creamy.

2. Chop the onion, slice cherry tomatoes in half, and peel and slice the cucumber into rounds. I like to peel strips of skin off the cucumber alternating with strips where I leave the skin on.

3. Add the chopped veggies and chopped parsley to a large mixing bowl.

4. Add the dressing – about 1/4 cup or more – and toss the salad up to combine. Transfer to a serving bowl if you want and sprinkle a little bit of flaky sea salt over the salad.

Once you have dressed the salad, it’s best eaten right away.

If you do have leftovers, store them in the fridge in an airtight container and enjoy within 24 hours, because the salad will get soft the longer it sits.

Cucumber tomato salad

  • 1 large English cucumber, peeled with stripes and sliced into rounds
  • 2 1/2 cups cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • Pinch of flaky sea salt, for serving

Avocado lime ranch dressing

  • 1 large ripe avocado
  • 1 cup plain Greek yogurt, full fat
  • 3/4 cup water
  • 3 tbsp dill
  • 3 tbsp parsley
  • 3 tbsp chives
  • Juice of 1 lime
  • 1/2 tsp dried onion
  • 1/2 tsp garlic powder
  • Heaping 1/4 tsp Kosher salt


Instructions

  1. Prepare the dressing: add all of the dressing ingredients to a food processor. Blend for 30 seconds – 1 minute, or until the dressing is smooth and creamy with no lumps.
  2. Add the cucumber, tomatoes, red onion, and parsley to a large mixing bowl.
  3. Pour 1/4 – 1/2 cup of dressing over the vegetables. Use mixing spoons to toss the ingredients together until everything is coated in the dressing.
  4. You can add more dressing if you’d like.
  5. Transfer the salad to a serving bowl if using, then sprinkle with a pinch of flaky sea salt to serve.

Notes

Once you have dressed the salad, it’s best eaten right away.
