It’s so easy to eat more produce during the summertime! Everything is so fresh, delicious, and abundant. From zucchini to corn to tomatoes, I love it all.

Two foods I most look forward to in the summer? Fresh peaches and heirloom tomatoes. It really blows my mind how flavorful peaches and tomatoes are when they are fresh and in season. A tomato purchased in January has no flavor, but July heirlooms are incredible!

This peach caprese salad combines both peaches AND heirloom tomatoes into one dish! It’s incredibly easy to make, taking just about 10 minutes to throw together. Serve it as a light lunch or as a refreshing side to some grilled fish or burgers.

What’s in peach caprese salad?

There are only five ingredients in this salad (besides salt, pepper, and olive oil)! Because of this, it’s important to get the best quality, freshest produce to make this dish shine. Here is everything you need:

  • Heirloom tomatoes: These are my favorite tomatoes to buy in the summertime. If you don’t want to use heirlooms, regular tomatoes are fine! Just be sure to seek out super fresh ones for maximum flavor. Beefsteak and vine ripened tomatoes would be great alternatives.
  • Peaches: You can use yellow or white peaches in this recipe. Wait until your peaches are perfectly ripe. A ripe peach will give a little bit when you gently squeeze it. Feel free to use nectarines instead for a similar flavor.
  • Basil: No chopping required! Just pick and wash the leaves and scatter them around the salad.
  • Fresh mozzarella balls: There are several sizes of fresh mozzarella available in stores. I used ciliegine, which are about the size of a cherry. If you can’t find ciliegine or bocconcini (one size larger), just slice a large ball of mozzarella.
  • Balsamic glaze: Instead of balsamic vinegar, I used balsamic glaze. It’s thicker and a less acidic than vinegar.

  • Slice peaches and tomatoes. Add to a large bowl.

  • Serve immediately.

Instructions
