Pulse oats in a food processor until coarse and grainy.
Add soaked dates, peanuts, peanut butter, salt, vanilla extract, and maple syrup. Blend together in food processor until ingredients are well combined. The mixture will be sticky and cohesive.
Press into a parchment-paper lined baking pan in an even layer.
