No Bake Birthday Cake Batter Balls (Vegan, Gluten Free)

Cake batter lovers, this recipe is for you! These no bake birthday cake batter balls are the most enticing healthy treat. They’re vegan, gluten free, easy to make, and brimming with lots of sprinkles!

  1. Add cashews to a food processor. Process for 2-4 minutes to break down the cashews into a smooth, creamy consistency. It should be almost like cashew butter, but not as runny as cashew butter you would buy in a jar.
  2. Drain the dates and add them to the food processor, along with the oats, vanilla extract, almond extract, and salt. Continue to process until a smooth and sticky consistency forms. You may need to scrape down the sides a few times.
  3. Transfer to a mixing bowl and mix in the 2 tbsp sprinkles. 
  4. Use your hands to form golf ball sized balls.
  5. If desired, pour 5 tbsp sprinkles into a shallow bowl. Roll each ball in the sprinkles to coat, reshaping into balls with your hands, while also pressing the sprinkles in.
  6. Place in the freezer for at least 30 minutes to harden. Enjoy!
