Margarita Eggplant Pizzas (Gluten Free)

  1. Preheat oven to 425F. Line a large baking sheet with parchment paper.
  2. Toss eggplant slices in olive oil, plus a generous shake of salt and pepper. Arrange in a single layer on baking sheet, making sure slices do not overlap.
  3. Bake for 15 minutes, then flip.
  4. Change the oven setting to broil, then cook for an additional 5 minutes on broil.
  5. Remove cooked eggplant. Top each slice with about 1 tbsp of sauce, then sprinkle on the cheese.
  6. Add 2-3 cherry tomato halves to each slice.
  7. Return to the oven, and broil again for 3-5 minutes, until cheese is melted and just starting to brown.
  8. Immediately sprinkle fresh basil onto each slice when you remove from the oven.
  9. Serve immediately.
