An easy and delicious kale salad recipe

Kale is one of those vegetables that needs a little TLC before you eat it. Raw kale is tough, bitter, and chewy. But once you know how to properly prepare kale, it might just become your favorite green.

One of my favorite ways to enjoy kale is in a salad. I won’t just munch on raw kale, though, it has to be massaged with a delicious dressing. Massaging a dressing into raw kale allows the leaves to soften, while spreading the dressing into every nook and cranny of the leaves.

Enter this creamy goddess dressing. I first tried goddess dressing in college, where one of the salad bars served goddess marinated tempeh and tofu. OMG you guys, that stuff was absolutely addicting! This is my take on the classic Annie’s Goddess dressing, which is loaded with tahini, lemon, garlic, and herby flavor.

What’s in this kale salad with goddess dressing?

Here is everything to make this salad plus the creamy goddess dressing.

  • Kale: I used curly kale, but lacinato kale will also work.
  • Tahini: You’ll find tahini in the ingredients list of Annie’s Goddess dressing. It makes it SUPER creamy and adds thickness.
  • Tamari (or soy sauce if not gluten free): Adds a layer of umami flavor to the dressing.
  • Avocado oil: Store bought dressings often use canola oil or vegetable oil. Here, we are using avocado oil, for its heart healthy fats and neutral flavor.
  • Apple cider vinegar: Vinegar and lemon juice add tangy flavor to the dressing.
  • Lemon juice
  • Chives
  • Garlic

How to make homemade goddess dressing

Making homemade goddess dressing is incredibly easy. It takes just five minutes, and makes about one cup.

You just need to blend all the dressing ingredients together in a food processor until smooth! You can also make this recipe without a food processor, by whisking the ingredients together in a bowl.

Once you have your goddess dressing, pour a generous amount over chopped raw kale. Use your hands to massage the dressing into the kale leaves until they soften.

Ingredients

  • 8 cups chopped kale
  • 1/3 cup tahini
  • 1/3 cup apple cider vinegar
  • 1/4 cup avocado oil
  • 1 1/2 tbsp lemon juice
  • 3 tbsp low sodium tamari (sub soy sauce if not gluten free)
  • 1 clove garlic
  • 1/4 cup chives, roughly chopped
  • Salad toppings of choice

Instructions

  1. Wash and dry kale, and place in a large mixing bowl.
  2. Combine the remaining ingredients in a food processor to make the goddess dressing. Blend for about 1 minute until everything is well combined and super creamy.
  3. Pour a generous amount of dressing over the kale (you will have some left over). I used about half. Use your hands to massage the dressing into the kale leaves. Continue for a minute or two until leaves are soft and well coated in dressing.
  4. Portion into bowls and top with desired salad toppings.

Notes

  • The tahini I used was salted. If you use unsalted tahini, you may need to add a dash of salt to taste.
  • This salad keeps well in the fridge for a few days.
