Ingredients

  • 3 bunches rainbow carrots, carrot tops removed
  • 1 1/2 tbsp avocado oil
  • 2 tbsp honey
  • Salt
  • Pepper
  • 1/4 cup feta cheese, crumbled
  • 1/3 cup pomegranate arils
  • Fresh herbs for garnish (optional – I used chives)

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper.
  2. Thoroughly scrub carrots clean or peel them.
  3. Toss carrots with avocado oil, honey, and a generous shake of salt and pepper.
  4. Roast for 45 minutes – 1 hour, flipping halfway through. Carrots will be done when outsides are browned and carrots are fork tender.
  5. Transfer carrots to a serving plate. Top with feta cheese, pomegranate, and fresh herbs if using.
  6. Serve warm.

Notes

  • Store in the fridge for up to 3 days in an airtight container.
