The most fun way to enjoy pancakes

Why is it that foods in mini form are so much more fun to eat? Give me a mini muffin, a tea sandwich, or a tiny lobster roll, and I’m a happy woman. These pancake mini muffins are no exception. They’re so fun to enjoy dipped in maple syrup!

Not only are these little guys fun to eat, they’re also easy to make and quite nutritious. To prepare the batter, just throw the ingredients into a blender until smooth. They cook up super quickly, in less than 10 minutes!

What’s in these pancake mini muffins?

Here are all the ingredients you need to make this recipe. Fun fact – this is also how you make my favorite healthy REGULAR pancakes. The batter can be used either way!

  • Bananas: The bananas provide moisture and natural sweetness to the recipe.
  • Eggs: You need eggs to help bind all the ingredients together and add moisture to the pancake mini muffins.
  • Rolled oats: Oats have more fiber than white flour. Make sure you use certified gluten free oats, if following a gluten free diet.
  • Almond milk + lemon juice: Adding a little lemon juice to almond milk turns it into a great substitute for buttermilk.
  • Cinnamon: A dash of cinnamon adds sweetness, and the flavor compliments these pancake mini muffins so well.
  • Salt
  • Baking powder
  • Toppings of choice: I used mini chocolate chips and blueberries.

How to make pancake mini muffins

This recipe is SO easy to make. First, blend all the pancake ingredients together in a high speed blender. You could also do this in a food processor.

Next, pour batter into mini muffin tins. Sprinkle with desired toppings, and pop them in the oven. Let them sit until cool enough to handle, and gently remove them from the muffin tin.

Optional, but HIGHLY recommended: serve with pure maple syrup on the side for dipping!

Ingredients

Pancakes

  • 2 medium, very ripe bananas
  • 2 large eggs
  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup almond milk mixed with 2 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp baking powder

 

  • Toppings of choice: I used mini chocolate chips and blueberries
  • 1/3 cup pure maple syrup, for dipping

Instructions

  1. Preheat oven to 415F. Spray mini muffin tin with spray oil, or line with mini muffin liners.
  2. Combine all pancake ingredients in a blender, excluding toppings and maple syrup. Blend until creamy and smooth, 1-3 minutes.
  3. Pour pancake batter into prepared mini muffin tin, filling each about 3/4 full. 
  4. Sprinkle on toppings if using. 8-10 mini chocolate chips and 2-3 blueberries worked well as to not crowd the batter.
  5. Bake for 8-9 minutes, until pancakes are puffy and a toothpick comes out clean when inserted into the center.
  6. Let sit until cool enough to handle and gently remove each pancake mini muffin. You can use a knife to gently release them, if they are sticking the edge.
  7. Serve warm with a ramekin of maple syrup on the side for dipping.

Notes

  • Will keep well in an airtight container in the fridge for 2-3 days.
