Have you ever eaten a magic bar? They’re also known as hello dollys or seven layer bars. Magic bars are typically made with graham crackers, sweetened condensed milk, shredded coconut, chocolate chips, butter, pecans, and butterscotch chips. They have a dense, chewy texture, and they’re so good!

These almond butter magic bars maintain the staple ingredients of chocolate, coconut, and pecans within a healthier base of oats and almond butter. You’ll love these just as much as the traditional recipe, if not more!

What’s in these almond butter magic bars?

Here are the basic ingredients you need to make these bars:

  • Creamy almond butter
  • Maple syrup
  • Flax meal
  • Non-dairy milk
  • Oats and oat flour
  • Brown sugar
  • Dark chocolate chunks or chocolate chips
  • Unsweetened shredded coconut
  • Pecans

How to make oat flour

Instead of buying oat flour, I always make my own. It’s super easy and takes just a minute.

  • Add old fashioned rolled oats to a blender or food processor.
  • Blend for 20 seconds.
  • Shake the blender container or scrape down the edges of the food processor, and check for any whole chunks of oats.
  • Blend again for 20-30 seconds.
  • If there are still some large pieces of whole oats left, repeat until you have a fine ground flour.
  • After you make oat flour, measure the required amount needed for your recipe.

Tips for making this recipe perfectly

  • Use creamy, natural almond butter. The only ingredient in your almond butter should be almonds, and sometimes salt. You need the almond butter to have a runny consistency for this recipe.
  • Use unsweetened, unflavored dairy free milk. This helps control the sweetness and overall flavor of the magic bars. I typically use almond milk.
  • Let the magic bars cool completely before slicing. I know, it’s hard to wait! But the bars may crumble if they aren’t completely cooled before slicing.

Instructions

  1. Preheat oven to 350F. Line an 8″x8″ baking pan with parchment paper.
  2. Prepare a flax egg by whisking together the flax meal and warm water in a small bowl. Set aside for 5 minutes, until a gelatinous consistency is reached.
  3. In a mixing bowl, add flax egg, almond butter, maple syrup, almond milk, and vanilla extract. Mix together.
  4. In a smaller mixing bowl, whisk together oats, oat flour, brown sugar, baking powder, salt, and cinnamon.
  5. Pour dry ingredients into wet, and mix to combine.
  6. Fold in coconut, chocolate chunks, and pecans.
  7. Pour batter into prepared baking pan. Batter will be very sticky. Use a rubber spatula to smooth it into an even layer, pushing into all corners.
  8. Bake for 25-30 minutes, until a toothpick comes out clean in the center.
  9. Let cool completely before slicing into 16 bars.

Notes

  • Store in an airtight container for up to 5 days.
  • Peanut butter would be a fine substitute for almond butter. Please note I have not tried this myself.
