These double chocolate tahini cookies just might be my new favorite cookie recipe. They’re incredibly fudgy, dense, and full of melt-in-your-mouth rich chocolate flavor. You get a double burst of chocolate in each bite, from the chocolate cookie and big chocolate chunks. They’re basically chocolate brownies in cookie form, so you get the best of both dessert worlds.

What’s in double chocolate tahini cookies?

  • Oat flour: You can make your own by blending oats it in a food processor or blender into a fine powder.
  • Tahini: The star of these cookies, tahini adds a depth of flavor while providing moisture. Using tahini eliminates the need for butter or oil.
  • Cocoa powder: This gives the cookie dough its rich chocolate flavor.
  • Flax meal: Mix this with water to make flax eggs, a vegan egg replacement, that helps bind the cookie dough.
  • Maple syrup: My liquid sweetener of choice.
  • Brown sugar: You only need half a cup to add the perfect amount of sweetness.
  • Dark chocolate chunks: The chocolate chunks put the “double” in double chocolate! I used these baking bars, chopped up. You can use chocolate chips instead.
  • Coffee: Optional, but recommended to enhance the flavor in the cocoa powder.
  • Vanilla extract

Tips for making this recipe perfectly

  • Break up chunks of brown sugar in the batter. Due to its moisture content, brown sugar tends to clump together. Make sure you mix it into the batter well to break up the chunks, otherwise it won’t mix in evenly. I recommend using your hands to sprinkle it into the bowl, instead of dumping it in all in one chunk.
  • Press down cookie dough balls with your hands before baking. These cookies don’t spread much when they bake, so press them down a bit before putting them in the oven.
  • Let cookies cool for at least 10 minutes before moving them. The cookies set as they cool. They will break apart very easily if you try to pick them up right when they come out of the oven.

Ingredients

  • 2 tbsp flax meal 
  • 6 tbsp warm water
  • 1/4 cup maple syrup
  • 1 cup tahini
  • 1 tbsp brewed coffee
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/3 cup cocoa powder
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup chocolate chunks

Instructions

  1. Preheat oven to 350F. Line 2 baking sheets with parchment paper. 
  2. Whisk together flax meal and water in a small bowl. Let it sit for about 5 minutes to form a gelatinous, egg-like consistency.
  3. In a mixing bowl, add flax eggs, maple syrup, tahini, coffee, and vanilla extract. Gently mix together.
  4. In a separate bowl, mix together oat flour, cocoa powder, brown sugar, salt, and baking powder.
  5. Add dry ingredients to wet ingredients. Mix well to combine.
  6. Fold in the chocolate chunks.
  7. Form cookie dough balls the size of golf balls. You should make about 16. Place them on the baking sheets, then press down on them slightly to flatten.
  8. Bake for 10-12 minutes on the top rack, one sheet at a time. Let cool for at least 10 minutes before handling.

Notes

Store in an airtight container in the fridge for up to a week.
