Cranberry White Chocolate Oatmeal Cookies with Walnuts

Description

These cranberry white chocolate oatmeal cookies are easy to make, soft, chewy, and festive for the holidays! They’re made with whole wheat flour and packed with chunks of cranberries, white chocolate chips, and walnuts.


Ingredients

  • 1 1/2 cups whole wheat flour
  • 2 1/2 cups old fashioned rolled oats
  • 1/2 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 tsp baking soda
  • 1 cup butter (2 sticks), softened to room temperature
  • 1/3 cup brown sugar
  • 2/3 cup sugar
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup toasted walnuts

Instructions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper or silicone baking mats.
  2. Whisk together the whole wheat flour, oats, cinnamon, salt, and baking soda.
  3. In a stand-up mixer or using a hand mixer, beat together the butter, brown sugar, and sugar for 2-3 minutes, until smooth and creamy.
  4. Beat in the maple syrup and vanilla extract until just combined.
  5. Beat in the eggs, one at a time, until well combined.
  6. Slowly beat in the dry ingredient mix, about a cup at a time. Mix until everything is just combined, being careful not to overmix.
  7. Stir in the dried cranberries, white chocolate chips, and walnuts by hand until evenly distributed throughout the cookie dough.
  8. Scoop rounded tablespoons of cookie dough and form balls with your hands. Place 12 cookie dough balls on the baking sheet, evenly spaced out.
  9. Bake for 9-12 minutes. Remove the cookies when the bottoms and edges are just beginning to turn golden brown.
  10. Let cool for 10 minutes, then transfer cookies to a wire cooling rack to finish cooling.

Notes

  • I like to bake cookies in batches, so they can all bake on the middle rack to cook more evenly. Once the first tray is in the oven, you can prepare a second baking tray to pop into the oven when the first batch is done.
