These chocolate peanut butter rice crispy treats are like the cool older sister of your favorite childhood treat. While the original is delicious, how could you pass up chocolate and peanut butter? I hope we can all agree that is the best food combination, like, ever.

These treats are not only mouthwatering, they are incredibly easy to make. No baking required! Just mix together the rice crispy layer ingredients and top with melted chocolate.

I used Lily’s Sweets dark chocolate baking bars in this chocolate peanut butter rice crispy treat recipe. All of their chocolates are sugar free and sweetened with stevia, but you would never know when you bite into a piece! This is coming from a true chocoholic. Lily’s is the real deal!

How to make chocolate peanut butter rice crispy treats

  • Mix together rice crisp cereal, peanut butter, maple syrup, and salt.
  • Pour into a baking dish and form an even layer.
  • Melt Lily’s Sweets dark chocolate baking bars.
  • Pour melted chocolate over rice crisp layer and refrigerate to set.

Tips for making this recipe perfectly

  • Use natural smooth peanut butter. The only ingredient should be peanuts (and maybe salt). Natural peanut butter doesn’t contain stabilizers, so it is drippy and liquidy enough to evenly coat the rice crisps.
  • Line your baking pan with parchment paper. You’ll be able to easily remove the rice crispy treats.
  • Melt chocolate using a double boiler. Use a double boiler to melt the chocolate to avoid burning. If you don’t have a double boiler, use this DIY method:
    • Fill a saucepan about 1/4 full with water.
    • Place a glass or metal mixing bowl over the saucepan. Make sure the bowl is not touching the water.
    • Add chocolate to the bowl.
    • Bring water to a boil, and stir chocolate occasionally until melted.

Ingredients

  • 3 cups brown rice crisp cereal
  • 1/2 cup almond flour
  • 1 cup creamy natural peanut butter
  • 1/3 cup maple syrup
  • 1/2 tsp salt
  • 8 oz Lily’s Sweets dark chocolate baking bars

Instructions

  1. Line an 8″x8″ baking pan with parchment paper.
  2. In a mixing bowl, mix together rice crisp cereal, almond flour, peanut butter, maple syrup, and salt.
  3. Pour into lined baking pan. Use your hands to gently press the rice crisp layer into an even layer.
  4. Break chocolate into chunks with your hands. Melt using a double boiler. 
  5. Pour melted chocolate over rice crisp layer. 
  6. Use a rubber spatula to spread chocolate into an even layer.
  7. Refrigerate for at least 30 minutes for chocolate to set.
  8. Bring rice crispy treats to room temperature before slicing to avoid cracking the chocolate. 

Notes

  • Store in an airtight container for up to 3 days.
