They’re both lusciously creamy and satisfyingly crunchy at the same time – with a peanut butter Greek yogurt base dipped in a smooth chocolate shell. They’re easy to make and require just 6 simple ingredients, no cooking required!

It is one of my favorite desserts, and I enjoy it all year round.

As a Registered Dietitian, I enjoy making homemade frozen treats that are even better than the store-bought versions you find in the frozen aisle.

These Greek yogurt ice cream bars hit the spot for an ice cream craving, but have less added sugar.

Just like my frozen Greek yogurt and strawberry Greek yogurt popsicles, these chocolate dipped peanut butter Greek yogurt bars are:

  • Creamy
  • Lightly sweetened with just honey
  • Made with minimal ingredients
  • Packed with protein
  • Incredibly yummy!

Ingredients

You need just six simple ingredients to make these Greek yogurt bars:

  • Plain Greek yogurt: Greek yogurt is a fantastic ingredient to use when making homemade frozen treats! It has a creamy texture and is a super nutritious, packed with protein, calcium, and probiotics. If you’re feeling extra creative, you can make these bars using my homemade Greek yogurt! I recommend using 5% or 2% fat Greek yogurt for these bars, because it is creamier and richer than nonfat.
  • Peanut butter: Creamy, natural peanut butter (the only ingredients are peanut and salt) is best for this recipe because it mixes smoothly with the Greek yogurt.
  • Honey: This recipe is lightly sweetened with a touch of honey. If you want these to be sweeter, just add another tablespoon or two.
  • Peanuts: You’ll mix these right into the Greek yogurt for a satisfying crunch.
  • Semi-sweet chocolate chips: Melted chocolate chips are the base for the chocolate coating.
  • Coconut oil: Why add coconut oil to melted chocolate chips? It helps create a silky smooth texture and allows the chocolate to harden much faster. When liquid coconut oil is met with cold, it hardens up!

Kitchen tools needed

  • Small mixing bowl and spoon
  • Popsicle molds – I used these small popsicle molds and they are the perfect size, in my opinion.
  • Popsicle sticks
  • Microwave

What to use instead of popsicle molds: You can use disposable plastic or paper cups, ice cube molds for mini popsicles, or just place blobs of the Greek yogurt mixture directly onto a parchment paper lined baking sheet, then freeze.

Step-by-step instructions

1. In a small bowl, mix together plain Greek yogurt, peanut butter, and honey. Stir in peanuts.

2. Set up your popsicle molds and fill each one with the Greek yogurt mixture. Freeze for at least 3 hours, until they are frozen solid.

3. Melt the chocolate chips and coconut oil in the microwave until completely melted.

4. Carefully dip the frozen Greek yogurt bars into the melted chocolate. Use a spoon to gently spread the chocolate around to coat the bars. Place on a parchment paper lined baking sheet and freeze for a 10 minutes.

5. Enjoy right from the freezer!

Storage

Once they are completely frozen, transfer bars to a plastic baggie or airtight container to store them. You could also wrap them up individually in foil or plastic wrap for storage.

Keep in the freezer and enjoy within 1 month.

  • 1 cup plain Greek yogurt, preferably 2% or 5% fat
  • 1 tbsp honey
  • 1/4 cup smooth natural peanut butter
  • 1/3 cup lightly salted peanuts, roughly chopped
  • 1/2 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil


Instructions

  1. In a small mixing bowl, mix together Greek yogurt, honey, and peanut butter until smooth and well combined.
  2. Stir in the peanuts.
  3. Prepare popsicle molds by inserting the popsicle sticks.
  4. Spoon the Greek yogurt mixture into popsicle molds, filling them up and smoothing them out flat.
  5. Freeze the bars for at least 3 hours, until they are hard and frozen solid.
  6. Once the bars are completely frozen, keep them in the freezer while you prepare the chocolate coating. In a microwave safe bowl, melt the chocolate chips and coconut oil in the microwave by heating for about 1 minute, stirring every 20 seconds until the chips are completely melted.
  7. Removing one bar at a time from the freezer, carefully dip the bars into the melted chocolate. Use a spoon to gently coat the entire bar with a layer of chocolate.
  8. Place the coated bars on a parchment paper lined baking sheet. Then freeze again for 10 minutes.
  9. Enjoy right from the freezer!
