You’ll never guess that these banana bread chickpea bars are made with chickpeas! They’re incredibly smooth, fudgy, and couldn’t be easier to make.
Have you ever had a chickpea dessert? I know, it sounds SUPER weird. Beans in dessert? Trust me on this one, these banana bread chickpea bars are crazy good.
The chickpeas in these bars add moisture and the fudgiest texture of all. Each bite is super smooth and filled with banana flavor and chocolate chips. You can’t taste the chickpeas at all – fiancé approved!
What is in banana bread chickpea bars?
Here are all the ingredients you need to make this recipe.
Bananas: Because it wouldn’t be banana bread without them! Choose very ripe bananas that have brown spotty peels for a sweeter, more pronounced banana flavor.
Chickpeas: These are the not-so-secret ingredient that add so much fudgy texture to the bar. I recommend using low sodium or sodium free chickpeas.
Maple syrup: This adds just enough sweetness to the bars.
Applesauce: Applesauce is one of my current favorite baking ingredients. It adds moisture to baked goods in place of oil or butter.
Oats: Instead of flour, these bars are made with oats, providing whole grain fiber to the recipe.
Cinnamon: This sweet spice adds classic banana bread flavor.
Tips for making this recipe perfectly
Use very ripe bananas. Wait until you have super ripe bananas to try this recipe. They should have several brown spots on the peel. Bananas get sweeter and have a more pronounced banana flavor as they ripen, which we want in these bars.
Use a food processor to blend ingredients. I recommend using a food processor over a blender to blend the ingredients together. Since there is very little liquid, the ingredients may get stuck in your blender, making it challenging to get a super smooth texture.
Use low sodium or sodium free chickpeas. Canned chickpeas without much added salt have a more mild flavor, which makes it easier to “hide” the chickpea flavor in these bars. You could also try this recipe with cooked dry chickpeas without added salt!
