As a Registered Dietitian, you might be surprised to hear that pizza is one of my favorite foods. We make homemade pizza a few times a month in our house, and it always satisfies a pizza craving. This asparagus pesto sauce pizza is a recent hit, and it’s just perfect for when asparagus is in season!

This asparagus pizza recipe is an oven baked pizza. If you’re new to cooking pizza in the oven, read on for tips. And don’t worry, you can totally make the the best homemade pizza without a pizza stone or anything fancy.

This is a vegetarian pizza recipe, and one pizza serves 2 people generously.

  • Feel free to use store bought pesto instead of homemade to cut down on prep time.
  • You can certainly use your favorite homemade pizza dough recipe, if you like to make your own.
  • Make it vegan by using a vegan pesto, and swapping fresh mozzarella for vegan cheese.
  • Use white onion instead of shallots in a pinch.
  • Swap pine nuts for raw cashews or almonds for a similar flavor in the pesto.

You’ll need a food processor to make homemade pesto, a baking sheet to bake the pizza on, and a saute pan for cooking the asparagus. I recommend baking the pizza on parchment paper so it doesn’t stick.

How to make asparagus pizza with pesto

  1. Start by preheating your oven to 450 degrees F.
  2. Make pesto by blending together basil, pine nuts, parmesan cheese, garlic, lemon juice, salt, and olive oil in a food processor.
  3. Saute asparagus and shallots in a saute pan until cooked through.
  4. Stretch out a store bought pizza dough on a floured surface. Then, place it on a parchment paper lined baking sheet.
  5. Spread the pesto onto the pizza dough. Top with slices of mozzarella cheese and the cooked vegetables.
  6. Cook in the oven for 10-15 minutes, until crust is golden brown and crispy around the edges.

How to cook pizza in the oven

It’s easy to make awesome homemade pizza in your oven, even without a pizza stone. The key to making great homemade pizza in the oven is to crank up the heat. Preheat your oven between 450-550 degrees F – usually as hot as most ovens will go. Start heating up your oven right away, so it has time to get super hot.

To prevent the pizza from sticking to a baking sheet, line it with parchment paper. You can also use cornmeal on the bottom of the crust to prevent it from sticking. Note that most parchment papers recommend using it up to 450 degrees, so keep an eye on your pizza to make sure the paper isn’t burning.

How long to cook pizza in the oven

Bake pizza in the oven right on the baking sheet on the middle rack until the crust is crispy golden brown on the bottom. This usually takes 10-15 minutes in a hot oven.

How to reheat pizza

The best way to reheat day old pizza is in the oven. To do so, preheat the oven to 350 degrees F. Lay out your pizza slices on a baking sheet and place the baking sheet in the middle rack of the oven.

Bake for about 10 minutes, or until cheese is melty and warmed through. Bake for longer if you prefer an even crispier crust.

Asparagus pizza

  • 1 tbsp olive oil
  • 1 large shallot, sliced
  • 1 pound asparagus, woody ends removed and chopped into 1 inch pieces
  • Pinch of kosher salt
  • Pinch of pepper
  • 1 store bought fresh pizza dough
  • 68 slices of fresh mozzarella cheese

Instructions

  1. Preheat oven to 450 degrees F. Line a large baking sheet with parchment paper.
  2. To a food processor, add basil, parmesan cheese, pine nuts, garlic, lemon juice, and salt. Blend until ingredients are combined but still slightly chunky.
  3. Add the olive oil to the food processor and pulse about 5 times to combine it with the other ingredients.
  4. Heat the olive oil in a saute pan over medium heat. Add the shallots and asparagus and a pinch of salt and pepper to taste. Cook for about five minutes, stirring occasionally until asparagus is fork tender but still crisp.
  5. Stretch out the pizza dough using your hands on a lightly floured surface. Transfer the shaped dough onto the prepared baking sheet.
  6. Spoon the pesto onto the pizza dough and spread it out into an even layer.
  7. Add the mozzarella cheese on top of the pesto, and then evenly spread out the cooked asparagus and shallots on top of the cheese.
  8. Cook in the oven on the middle rack for 10-15 minutes. Pizza will be done when the crust is crispy and golden brown on the outside and bottom of the pizza.
  9. Let pizza cool for a minute, then slice and serve.
