It’s pretty much a salad dressing version of my avocado Greek yogurt dip, so it has a flavor similar to guacamole – YUM.

Made in a food processor, you can prepare this dressing in 5 minutes. It’s vegetarian, gluten free, nut free, and soy free.

Ingredients

  • Avocado: Ripe avocado is best for this dressing to avoid any clumps when blending it up.
  • Cilantro: This dressing has lots of fresh cilantro flavor!. So if you’re one of the poor souls for whom cilantro tastes like soap, you can try subbing another fresh herb here.
  • Lime: Lime, cilantro, and avocado are a classic flavor combo for good reason! Lime adds a nice hit of acidity.
  • Greek yogurt: Plain Greek yogurt helps to make this dressing extra creamy, and adds a boost of protein!
  • Milk: I used regular cow’s milk, but you can use a plant-based milk if you prefer. Just make sure it is unsweetened and unflavored.
  • Garlic: Fresh garlic adds zippy flavor to this dressing.
  • Cumin: You’ll love how cumin enhances all the flavors in this dressing.
  • Salt: A generous pinch of salt to enhance the dressing flavors.

Kitchen equipment needed

  • Cutting board
  • Chef’s knife, 6 or 8 inch
  • Food processor
  • Measuring cups and spoons

If you do not have a food processor, you can try making this dressing in a blender. Add the liquid and soft ingredients first to optimize blending.

Step-by-step instructions

This dressing is so easy to make!

  • Add all the ingredients to a food processor.
  • Blend for 30 seconds – 1 minute.
  • Scrape down the sides of the bowl, then blend again for 30 seconds – 1 minute until creamy and smooth with no lumps.

Storage

This recipe makes about 1 1/2 cups of dressing. Store in an airtight container, like a glass jar, in the fridge for up to one week.

Give the dressing a stir before serving again after storage.

Ingredients

  • 1 ripe avocado, peeled and pitted
  • 1/4 cup plain Greek yogurt
  • 2/3 cup milk
  • Juice of 1 lime
  • 1/2 cup cilantro
  • 1 clove garlic
  • 1/2 tsp cumin
  • 1/2 tsp salt


Instructions

  1. Add all the ingredients to a food processor bowl fitted with an S-blade.
  2. Blend in food processor for 30 seconds – 1 minute.
  3. Use a rubber spatula to scrape down the sides of the bowl.
  4. Blend again for 30 seconds – 1 minute, or until everything is blended up with no lumps and the drssing is silky and creamy.
