Description

This savory cottage cheese bowl is loaded with fresh flavor and over 20 grams of protein to keep you full and satisfied all morning. Creamy cottage cheese is paired with jammy soft-boiled eggs, crunchy cucumber, fresh tomato, and seasoned simply with olive oil and everything bagel seasoning. A quick & easy high-protein breakfast recipe that takes just 10 minutes to prepare!


Ingredients

  • 1-2 large eggs
  • 2/3 cup cottage cheese
  • 1 small cucumber, sliced
  • 1/2 cup cherry tomatoes, cut in half
  • 1/4 tsp everything bagel seasoning
  • Drizzle of extra virgin olive oil

Instructions

  1. Bring 2-3 quarts of water to a boil in a small pot.
  2. Gently lower eggs into the boiling water.
  3. Boil eggs for exactly 6 minutes and 30 seconds.
  4. Immediately place the eggs in a bowl with ice water for 3-5 minutes to stop cooking.
  5. Cut up the veggies: slice the cucumber and cut the cherry tomatoes in half.

  6. Assemble the bowls: add the cottage cheese to the bottom of a bowl. Top with the vegetables.

  7. Peel the soft boiled eggs and cut them in half. Put them on top of the cottage cheese.

  8. Sprinkle with everything bagel seasoning and add a drizzle of olive oil.

Notes

How to make soft boiled eggs

  • Bring 2-3 quarts of water to a boil in a small pot.
  • Carefully and gently lower eggs into the boiling water with a slotted spoon.
  • Set a timer for 6 minutes and 30 seconds.
  • Fill up a bowl with ice water.
  • Once the timer goes off, immediately move the eggs to the ice water with the slotted spoon.
  • Let the eggs cool in the ice water for 3-5 minutes.
  • To peel soft boiled eggs: gently tap the ends of the egg on the countertop. Roll the egg on the countertop to create small cracks. Then peel off the shell and discard.
